Consumer advocate Lee Levitt faced the challenge head-on to shed light on an increasing problem. Though many people who experience symptoms related to gluten intolerance are not diagnosed with this disease, about 2 million people in the U.S. struggle with it. Food allergies and hyper-sensitivities have increased with pollution, preservatives, and mass-market food production. Though resources are improving, and public acceptance is growing, we still need to learn more about digestive disorders for proper diagnosis.
